    Wine can be defined as an alcoholic beverage which is made from various types of grapes that have been fermented

    Wine is naturally fermented by yeast - during the process of grape fermentation, where no sugar, water, acid or enzyme is added. Some wine types are also produced from the fermentation of cereals or fruits, like rice wine (made from rice) and fruit wine (made from cherries, plums and other fruits). The most common types of wines are white wine, red wine, rose wine and fruit wine.

  • Matching food and wine

    Wine and food matching is the process whereby dishes are paired with wine in order to improve the dining experience. Matching food and wine requires certain skills and guidelines.

    The first principle of this process involves pairing wine and dishes that complement one another. An example of this would be in the instance where Pinot Noir is paired with dishes comprised of mushrooms. Another example is the creamy, buttery Chardonnay which goes well with a creamy, lemon sauce.

    The second principle involves pairing food and dishes that have contrasting flavours. An example involves pairing Savignon Blanc and a fish with creamy lemon sauce. The acidic taste of the wine will contrast against the creamy taste of the sauce.

    Thirdly, food and wine that have a taste in common can be complemented or contrasted. An instance of this is demonstrated with nutty cheese being served with a nutty, sweet wine. It is also possible to include ingredients that are perceived in a wine with the ingredients of the paired dish. For instance, rosemary is a flavour that is present in some Carbernet Sauvignons. It can also be used to cook lamb dishes, and as such, pairing this wine with this sort of dish works well. 

  • Regulations for selling wine

    • All wine retailers must comply with the federal laws and regulations of selling alcohol
    • Wine must not be sold to individuals that are below 18 years of age
    • Guests are not allowed to sell or purchase wine at social gatherings – a specific license is required
    • Wines must not be served to an already intoxicated individual
